You may wonder why the red pepper is so popular. Here is a common explanation.Sichuan has a humid climate that encourages people to eat strongly spiced foods.the red pepper may help reduce internal dampness.

Usually, the teachers will explain the general knowledge of Chinese cuisine especially Sichuan Cuisine, such as the basic characteristic of world cuisine, the characteristic of Chinese cuisine and its genre, the characteristic of sichuan cuisine etc..
after the lectures everyday, all the students will cook dishes themselves from the preparation to the finish cooking. For instance cold dishes such as cold sliced chicken with sichuan pepper¡¢Chuanbei spicy starch noodles and hot dishes like spicy chicken fried with peanuts¡¢(the marked woman¡¯s bean curd¡¢ fish-flavor sliced pork.
